A fine dining restaurant in the heart of Palermo, where Sicily comes to life through food and wine.

Not a collection of traditions to recreate, but a living culture to explore. Ingredients, people, places and stories become opportunities for discovery and connection. We approach them with curiosity and respect, offering a vision of Sicily that is authentic, personal and contemporary.
A’ Cuncuma was born from this perspective: to explore, interpret and tell the story of Sicily.
Rooted in Palermo
A Name Rooted in Palermo’s History
A’ Cuncuma takes its name from the ancient Giardino della Cuncuma, a historic garden that once stood among the streets of this Palermo neighbourhood.
Today, we are located on Via Judica, in the heart of Palermo’s historic centre. The city is more than just our setting: it is where our cuisine, our exploration and our approach to hospitality all begin.

Sicily Through Cuisine
The Restaurant
Gianfilippo Gatto’s cuisine begins with the ingredients, the seasons and the memories of the places they come from.
Technique becomes a way to explore ingredients from a fresh perspective, while preserving their identity and character.
Sicily Through Wine
The winery
Valentina Crescimanni’s wine selection explores Sicily’s wine regions, grape varieties and producers, from established names to small, lesser-known wineries.
Each bottle represents an encounter and a different way of discovering the island, whether enjoyed on its own or paired with the cuisine.

Executive Chef
Gianfilippo Gatto
Born and raised in Palermo, Gianfilippo brings together experience, technique and a spirit of exploration in his cooking, with Sicily always at the heart of his culinary approach.
