Sicilian
Cuisine
In the heart of Palermo’s historic centre, A’ Cuncuma’s cuisine is shaped by the interplay of ingredients, local heritage and culinary exploration.

OUR cuisine
Rooted in its origins
Exploring new forms
Every dish begins with what Sicily has to offer. An ingredient, a season, a memory or a place can become the starting point for a process of exploration shaped by technique, experience and intuition.
At A’ Cuncuma, our approach to cooking is about understanding the true character of each ingredient and revealing it from a new perspective, while staying true to its origins.

Executive Chef
Gianfilippo Gatto
Born in Palermo and raised in a family with strong ties to the restaurant industry, Gianfilippo Gatto developed his culinary expertise through experiences in Sicily, across Italy and abroad. His encounter with chef Vincenzo Pinto marked an important chapter in his training and his connection to A’ Cuncuma.
After years spent away from the island, returning to Palermo offered him the opportunity to see Sicily from a different perspective: to rediscover its culinary heritage, explore its ingredients and transform the experience gained elsewhere into a personal culinary language.
Today, his cuisine is shaped by this constant dialogue between tradition and interpretation.

Ingredients
Come First
exploration
A’ Cuncuma’s exploration of Sicily takes us across the island, discovering its ingredients, producers and diverse regions.
Sicilian grains, fish, vegetables, cheeses, herbs and products rooted in specific places become a way to discover an island shaped by diversity, seasonality and local identities.
Choosing ingredients goes beyond quality alone. It means knowing what enters our kitchen, understanding its character and finding the most respectful and compelling way to tell its story.
