At A’ Cuncuma, our exploration begins long before we enter the kitchen and extends far beyond the plate. We travel across Sicily, meeting producers, seeking out ingredients, tasting wines, exploring different regions and listening to the people who call them home. Everything we discover finds its way back to Palermo, where it takes on new forms.
In Gianfilippo’s kitchen, it becomes a dish.
